How to Maintain your Nambu Tekki cookware?
As you know, Nambu Tekki has very good heat conductivity for cooking. In addition to that, they are very tuff and long-lasting. Even they get old or rusted, you can just repair them. Take a good care of your Nambu Tekki cookware and use it for your lifetime!
When you use your pan or pot for the first time, wash it thoroughly with hot water and heat it to evaporate the water. Then apply cooking oil and heat it for 2-3 minutes with medium heat. Please use the pan/pot after it is fully seasoned with oil. When seasoning, you can stir-fry vegetable scraps or something to season the oil better.
Preheat your pan/pot for 3-5 minutes on low to medium heat before putting any ingredients. Not like non-stick pans, Nambu Tekki pan does not have coatings, so putting ingredients in the pan when it’s still cold can result sticking. After it’s heated evenly, put 1-2tbsp oil and spread on entire pan/pot. If you think the remaining oil is too much for cooking, you can take it off from the pan. Then add whatever ingredients you’d like to cook!
Do not store food for a long time in the pan/pot after cooking! It can be the reason of sticking or rusting. So move the food to another container as soon as possible. After use, wash it with hot water, wipe off moisture adequately, and heat empty to dry it completely. Then apply the thin layer of oil all over for protection and store in a dry place.
When it gets sticking, remove it with hot water and scrub brush (No steel wool brush or detergent!). If the sticking is hard to remove, soak it in a hot water for a while and it gets easier to remove.
Only when removing the rusting, you will use a cleanser or steel wool brush. Scrub the pan/pot to remove the rusting completely, and wash thoroughly with hot water.
After remove sticking or rusting, make sure to dry it completely, apply thin layer protection oil before storing.
