3 (plus 1!) tips for making fluffy Japanese Pancakes at home
Have you dreamed of making fully pancake you see in the restaurant? They may have secrets in their ingredients or methods but here are some easy tips you can do at home to level up your pancake!
- Don’t whisk too much!
You should not be mixing the pancake mix too much. To avoid this, mix eggs and milk first. When those are mixed well, and add pancake mix to it. Whisk just about 20times is enough. Do not make it smooth!
- Never cook on a high heat!
Heat the pans or skillets over medium heat until drop of water sizzles. When the pans or skillets are warmed up, turn it to low heat. Add a little amount of oil or butter to prevent sticking.
- Do not flip too early, wait until ready!
Scoop mixture and pour it to the pan. You should not be flipping them too early, when you see bubbles start forming on the surface it’s time to flip them! Do not hesitate, do not worry and flip them fast and you will see the beautiful round pancake.
You can use non stick pans or plates, but copper or iron pans are recommended as they have great heat conductivity. Many of Japanese famous fluffy pancake shops use copper pans/plates. It helps cook pancake in a shorter heating time and it results in dreamy fluffy pancakes J If you have copper or iron Tamagoyaki pan, that works great too!
